Meat CSA Overview
Our Meat CSA includes monthly deliveries of mixed-cut boxes of our farm’s beyond grass-fed beef, pastured pork,
and prairie-fed chicken available for on-farm pickup, local delivery to the Madison, La Crosse, and Viroqua areas, and regional shipping anywhere in Wisconsin, Minnesota, Iowa, and Illinois.
Meat CSA Share Sizes and Contents
Shares include a customizable mix of beef and pork cuts in proportion to how they come off the animal, portioned out into monthly deliveries. There is variability through the year, and some months may have more or less, but the average share will contain roughly 60% beef and 40% pork.
A typical full share includes:
1.5 lbs beef steaks or pork chops
3 lbs beef/pork roast
4 lbs ground beef
1 lb breakfast sausage or brats
1 lb bacon
Beef cuts include: rib, porterhouse, t-bone, tenderloin, and sirloin steaks, chuck, stew meat, and ground. Pork cuts include chops, steaks, roasts, sausage, bratwurst, and bacon.
