Steaks on the Grill

1 pkg steaks

coarse salt

black pepper

 

Make sure steaks are all the way thawed. Season with salt and pepper and bring to room temperature.

Heat your grill. Make sure it’s hot. You can test by holding your hand over it, about 3 inches. If you have too move it after 3 or 4 seconds it’s ready. If you can make a hot and cool side by turning off a burner or raking the coals to one side.

Sear the steaks first over direct heat, a couple minutes per  side. Then move off the direct  heat, cover the grill, and cook until medium rare, 120 or medium, 135. This should take around 6 minutes or so, but  do check the temperature.

When cooked to your liking, remove and let rest tented under foil for 5 minutes before serving.

Serve plain, with a sauce, or like we did this spring with nutrient-packed nettle pesto.
