Heralding the arrival of spring, Stinging Nettles are some of the first green plants to emerge from the thawing ground. After a long winter of eating canned vegetables and fermented cabbage, we are always super excited for nettles to arrive – the first fresh greens of the season. They taste like spinach and are super nutritious. Chock full of vitamins and minerals, nettles are one of nature’s super food medicines.
One of our favorite ways to eat nettles are as Pesto. Just as tasty as basil pesto, and super good for you!
Nettles Pesto Ingredients:
- Blanched Stinging Nettles
- Extra Virgin Olive Oil
- Local Parmesan Cheese
- Lemon Juice
- Salt and Pepper
