Lamb chops are the most tender of the lamb cuts so they are a rare occasion that can be enjoyed with hot, fast cooking. We like a medium rare lamb chop, but as always cook longer for more well-done fare.
Brush lamb chops with olive oil, including the fat. Dice up some garlic. Season with salt and pepper, and a seasoning of your choice. We especially like rosemary and minced garlic.
Set the broiler on high and broil for 5 minutes on each side. This will give you medium rare chops.
Let rest before serving.
