Coconut braised round steaks
This recipe is good for any cut of meat, especially round steaks or chuck roasts that need a little gentler cook, but a simple recipe to bring out flavors.
2-3 lbs round steaks or roast of your choice
2 tbsp. coconut oil
3 cloves garlic minced
2 red chilies minced
3 tsp minced ginger
1 can coconut milk
2 tsp lemon juice
Fresh basil, limes for garnish
Salt and pepper round steaks. Cut into roughly one inch cubes.
In a heavy-bottomed pan, heat two tablespoons coconut oil. Sauté the garlic, ginger and chili for one minute. Add beef. Keep heat medium-high to brown.
Once browned, add coconut milk and lemon juice and seal with a tight fitting lid. Reduce heat to low. Simmer 1 to 2 hours or until beef is tender.
Either reduce liquid for a stir fry or serve as a stew. Adjust seasonings to taste. Garnish with lime juice and fresh basil.
